🍰 Classic Sponge Cake Recipe

Ingredients:
1 cup (125 g) all-purpose flour
1 tsp baking powder
4 large eggs (room temperature)
¾ cup (150 g) sugar
½ cup (115 g) unsalted butter (melted) or ½ cup vegetable oil
¼ cup (60 ml) milk (room temperature)
1 tsp vanilla extract
A pinch of salt
Instructions:
Preheat oven:
Set to 170°C (340°F). Grease and line an 8-inch (20 cm) round cake pan with parchment paper.
Mix dry ingredients:
In a bowl, sift together the flour, baking powder, and salt. Set aside.
Beat eggs and sugar:
In a large bowl, beat the eggs and sugar with a mixer on high speed for about 5–7 minutes until pale, thick, and fluffy.
Add wet ingredients:
Gently fold in the melted butter (or oil), milk, and vanilla extract.
Combine with flour:
Gradually add the flour mixture, folding gently with a spatula until just combined. Avoid overmixing to keep the batter airy.
Bake:
Pour the batter into the prepared pan. Tap lightly to remove air bubbles.
Bake for 35–45 minutes, or until a toothpick inserted into the center comes out clean.
Cool:
Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
